Mushrooms have SO many more uses than just whole or sliced. I adore mushrooms in every form, whether whole, sliced, minced, and/or cooked, but a lot of people forget that if they are DRIED it makes them a seasoning. Which can be as crucial as salt and pepper depending on the recipe. Ground dried mushroom powder is absolutely indispensable in my pantry.

For smokiness I use a product called ‘liquid smoke’ it’s an amazing flavour enhancer for anything that would use ham like pea soup, baked beans etc :)

Almonds are one. I use them to make almond milk for my morning coffee and my cereal. Then I dry the pulp in the oven to make almond flour. I use the almond flour to make vegan parmesan cheese. Life is good!

My best trick is contrasting sour flavors with fat. Usually avocado or a nut butter. Fermenting also ties as my biggest trick. It takes a few special lids and not much salt to make extremely exotic flavors that just keep going. Also, ferments are acidic. Can't forget microgreens either.

My daughter doesn't like mushrooms either - so I put them in the food processor to give them a ground like texture. I use this for tacos, chili, etc. and she eats it without fuss 🤗.

My Polish Grandfather used to go foraging for mushrooms, and knew which ones were safe to eat. I hate that his knowledge was lost to the hands of time. I eat mushrooms almost daily, and noticed they’re almost impossible to burn. They just get crispier, and their flavors bloom more, but they never seem to overcook. Lovely video!

Be careful foraging for wild mushrooms. About a month ago two people died and many people were sickened when a sushi restaurant in Bozeman, Montana served wild mushrooms in sushi rolls to customers. My husband had a good friend who died after consuming wild mushrooms he foraged; He had been foraging wild mushrooms for many years. I had a mushroom guide book and it showed pictures of a deadly poisonous mushroom called a Death Cap mushroom that is easily misidentified with another safe type of mushroom.

Omg! You just saved my life with this collard green tip. I’m not vegan or vegetarian but I do like to still eat call greens even when I don’t have Bacon on hand. And I’ve tried to use veggie stock and other vegetables to give it a flavoring but it is never quite the same. I’m going to try this!

I just recently went vegan and am learning to make plant-based “meat”. I’m using mushrooms, and I’ve got wheat gluten down fairly well. I got a can of jackfruit to give that a whirl. I wish more people would open vegan restaurants. Outside of big cities, I have to just cook for myself. Thank you for your videos.

Tomato paste works best when it's cooked for a long time. Braggs and tamari are really good to use instead of soy sauce for slightly different umami flavours.

I've never tried soy sauce on collard greens. I will have to try it. I normally make mines with shitaki mushrooms or portobello mushrooms and bell peppers. Then I season it with garlic powder, onion power, salt and smoked paprika. I feel like replacing the salt with soy sauce will make it even more flavorful. I can't wait to try it.

I hated mushrooms as a kid, until my dad (who my mom met and married when I was. 12) made them for me. He made fresh mushrooms as a Portobello burger for me.(I was a vegetarian at that age) and it was amazing. Prior, I’d only have canned and those are mushy.
