Falafel come in many shapes and colours. They have been eaten throughout the Middle East for centuries. Here, too, chickpea fritters have long been popular. Inspired by the Egyptian variety, we decided on the green version and spent some time tweaking our recipe. Crispy on the outside, beautifully spicy and juicy on the inside. It's worth making them yourself, because you can keep them in stock. In the new video, we reveal handy tips & tricks and show you the result from the Airfryer, pan and deep-fried in oil.

📝 Ingredients for approx. 1kg falafel mixture - yields approx. 30 falafel pieces, depending on the size.
350g dried chickpeas
100g frozen peas
1 bunch flat-leaf parsley (200g)
3 cloves garlic (20g)
1 mild onion (150g)
2 large mild green chillies (50g)
2 tsp grated lemon zest
1 tbsp lemon juice
1 tsp baking powder
Salt
Falafel seasoning
1 ½ tsp cumin seed (➡️ amzn.to/3iDBzL5*)
1 ½ tsp coriander seed (➡️ amzn.to/3IQECKS*)
½ tsp ground pepper
1 tsp garam masala (cardamom, clove, cinnamon)
1 ½ tsp dried mint (➡️ amzn.to/3w0Vozf*)
½ tsp pul beaver or other chilli flakes
2 tsp olive oil
Also oil for frying
Note: Additional chickpea flour for binding is not necessary. However, if your dough is too moist, you can mix 1-2 tbsp of chickpea flour into the mixture.
