冰激凌膨脹也有很多原因是水分結晶體積膨脹。水在4攝氏度的時候體積最小。結冰後體積膨脹。

I got a few nerdy questions. 1. I saw some other channels recommending using gelatin by itself as a “stabilizer”. For my understanding, gelatin has two effects: increasing viscosity, and contributing to emulsification. Whereas, I believe those gums you use in the recipe only increase viscosity. Do I understand correctly? 2. If increasing viscosity is the only reason for gums, why using different types of gums? What do you mean by achieving similar effects as the egg whites?
Following along as best I can with my rudimentary Mandarin. Ice cream was one of my favorite things to make (bread being the other) when I was a pastry chef. I need to buy an ice cream maker for home so I can continue my experiments. My current white whale is recreating a lemon meringue pie into ice cream. And a proper strawberry ice cream where the flavor of the strawberries doesn't get diluted.
chef if you want tea flavored creme anglais type ice cream, can you steep your tea leaves in the milk/cream 1st before making your creme anglais for your ice cream?

Yes you absolutely can. And you definitely should if you’re a civilized person. If it’s me I would save the hassle and just blend the mixture with tea during its cool down cycle. There’s a good chance that if you’re making tea flavored anything, the tea itself is a bit shit. So treating it with all the respect of a proper steep is kind of a diminishing gains scenario. In summary. Just throw your tea in after you’ve made your mix and cooling down.
