Hi guys in this video I show you how to make French Tiger Bread at home, season recipe of the month, Not only is this bread so easy to make it's no time dough. but what makes it the best is the topping, One of the Delicious bread ! Home Bakers recipe:
Ingredients
532g strong bread white flour
10g salt
10g bread improver
5g sugar
32g Fresh yeast
5 ml veg oil
354 ml warm water
Prep release spray
Flour, for dusting
Method
1. Place warm water and yeast in mixing bowl, mix around with hook in bowl, add in flour, improver, sugar, salt and oil.
2. Mix well on 1st speed for 1 min and then on 2nd speed for about 6 mins may need longer, until firm dough, adding more water as required.
3. Should be elastic dough.
4. Place the dough in a bowl to rest for 10mins
5. Remove the dough from the bowl and start cutting into 4 pieces and mould into a ball
6. Rest the dough pieces for 5mins
7. Now roll out into and sausage 32cm long
8. Now wash the tops with tiger topping
9. Best thing now is to put them into a proving box with some warm water in it and heat, put into a warm place until the rolls have doubled in size about 30 mins
10. Now ready for over baking 200c for 15 - 20 mins or until golden brown
11. Now out the oven cool down before you can eat them
For the Tiger paste
• 60g rice flour
• 1/4 teaspoon salt
• 1 1/2 teaspoons dried yeast
• 1 1/2 teaspoons seseme oil must have
• 65ml warm water
• 1 teaspoon sugar
• To make the paste: Mix together rice flour, salt and yeast. Stir sesame oil into the warm water with the sugar. Pour the liquid slowly into the flour, stirring constantly until well combined. For my best Tiger bread a good thick coat, this mixture should be like thick emulsion or wallpaper paste.
Now you can have a cup of tea well done bakers

One thing I did notice was I adding to the top before proofing, then adding to the top after proofing, odd thing in 4 different tests it was different each time, I am still out on which is best, I did one by adding bread crumbs to it which worked well, and of course oven temperature made a difference to my topping, funny it's all new to me, and I made 4 smaller loafs and not one big so time in the oven also makes the topped bread different, in total I made 10 loafs in the testing and this was the best of all, it's all down to the oil I think laters Steve

Bread improvers, I remember a bakery close to ours used S500 and aquazine, if memory serves me right.

Funny thing years ago the old Bakery I worked at used S500 a blast from the past, no idea what aquarzine is, I prefer malt flour, but today I got some in to sell in my Bakery shop, this came about because a number of people were asking about speeding up dough on Facebook, so I took it on my self to start testing out some products, I have even tested out sourdough bread with it don't do it waste of time on sourdough bread, it's all good laters 😀

interesting , never made this before , but im reminded of when i was at dough school as they called it up here in scotland , its collage for bakers , irvines the one i worked for wanted me to have certificates that he could put on the shop wall , once at college steve we were to make rye bread and it was made in an artex ? mixer it was like a fork and knife mixing blades and we cooked them in a gas rotary oven ? never seen these devices since and i wasnt a fan of the rye bread.

I still have my artfex, but never use it now 😔 on odd occasions I do start up and clean it 😀 lovey machine 😉 it is hard for me to sell it, so basely sit in the bakery 😀

@Ian Allardice I personally think the artfex is better, maybe because it's slower mix, it's old school at the best 👌 bread was better than what I make in the spiral mixer, I do love the way in works 💪 and very rewarding 😀

Wow, Tiger Bread is my all time favourite bread and you made it look so easy. Going to have to get me some more ingredients now. On a side note it would have been good if you had deliberately baked one of those loaves upside down (line on top) so we could see what will happen. Love your content and I have only watched two so far (my rolls from the other video are currently proofing).

I have not got a machine with a dough hook. Presumably this will work with a good hand kneed?

Hi yes of course, you can make this the same as a standard loaf, as this is a no time recipe, you can slow it down by by cooling down your ingredients and bowl, funny thing is this recipe is mostly used for bread rolls for that nice light inside enjoy 😄 laters Steve

Can you please tell me how much fast acting dried yeast I need?

Hi mate, for me what I am using same as fresh yeast, best to check out on the side of the packet you are using, mine is professional dried yeast, this is for general These two types of yeast are interchangeable in recipes, but remember that you need to use twice as much fresh yeast (by weight) than dry. Therefore, if a recipe asks for 7g dried yeast you will need to use 14g of fresh or compressed yeast and vice versa. Hope this helps laters Steve 😀

Most recipes put the paste on after proving, which is tricky without losing the air, does it matter if you do it before or after prooving?

Hi mate this was a question of mine to myself, now funny thing about this, from my testing out of topped it's all down to the proving, now in my Bakery I tested out both ways and it's working the same, now my Bakery oven is not a fan oven, and now for the interesting bit at home dry proving in my box frist time it's was put on afterwards was not so good, so I put it on frist and it was ok, now for the big question is what best at home proving box with heating and water, adding the paste 15 minutes after moulding the dough in the box, also fan oven with steam, Ice into bottom of oven, hoping this helps you laters Steve

Years ago when i was a small child our bakery shop would sell us fresh yeast I have no idea where to buy it now I have to use dried yeast. 😒

Dry activated yeast is the same as fresh yeast Dryed, it moves very quickly, add in the flour impover and you are baking like a professional Baker 😀
