Cheung Fun with delicious soy sauce is one of those foods that I must order every time I go for a Cantonese restaurant for a dim sum.
Ingredients:
Rice Flour:180g
Corn Starch: 50g
Tapioca Starch: 60g
Water: 800ml
Spring Onion: 6
Oil: 1tbsp
Dried Shrimps: 50g
Sauce:
Light Soy Sauce: 2 tbsp
Hot Water: 2 tbsp
Sesame Oil: 1tsp
Sugar: 1/2 tsp
Method:
1. Chop some spring onions.
2. Prepare about 50g of dried shrimps.
3. Warm up the pan, add a teaspoon of oil, drop in the dried shrimps and fry for 1-2 minutes.
4. Make the batter (Mix rice flour, corn starch, tapioca starch, water and oil). This will make about 14 rice rolls. You can adjust the amount of batter and water according to your own needs.
5. Boil some water in a pan.
6. Prepare a rectangular tray. Apply a coat of oil.
7. Pour a large ladle spoon into the tray.
8. Sprinkle some dried shrimps and chopped spring onions.
9. Put the lid on and steam for about one and half minutes.
10. Use a dough cutter to fold up the rice roll.
11. Make the sauce, mix it well, Pour on the rice noodles and enjoy.
