Miso soup is probably Japan's favourite food - a lot of Japanese people drink it every day - dinner wouldn't be dinner without a bowl of miso soup.
You don't have to make a special stock for miso soup - you can buy stock granules and powders which will make a really tasty and nutricious miso soup in minutes. Take a look online and you'll probably find probably from Ajinomoto, Marutomo and other Japanese makers. (If you would like to make a quick/simple Japanese stock - dashi - yourself, then take a look at my playlist at the end of the video by all means.)
A traditional miso soup would contain some chopped spring onions, daikon and maybe some cabbage. This recipe is a little more modern, so the vegetables are a little different, bell pepper, aubergine / eggplant, courgette / zucchini and some baby sweetcorn. I used some shredded shiso leaf a a garnish but you could use a little chopped spring onion or some white sesame instead - either way, I am 100% sure you will find this delicious!
