CNY Dish | Braised Pork Knuckle 红烧元蹄 (横财就手). The main challenge of this dish is how to make the whole knuckle soft and tender and it will requires double to triple the time than our normal chopped pork leg. Also, we need to submerge the whole pork knuckle under the braised broth fully in order to achieve best results, therefore would be great if the butcher can help to remove part of the middle big bones so as to reduce the thickness.

CNY Dish | Braised Pork Knuckle 红烧元蹄 (横财就手)
Ingredients:
1 pork front leg, approx. 1 kg
A few slices of ginger (for blanching process)
A good amount of rice cooking wine (for blanching process)
4 hard-boiled chicken eggs
1 bowl of chicken stock (1 teaspoon of Cooking Ah Pa chicken stock + hot water)
1 packet of siu bak choy (blanching and serving with the braised pork knuckle)
Fresh Herbs Ingredients:
Few slices of ginger
Few slices of galangal (blue ginger)
2 cloves shallot, sliced
2 cloves of garlic, chopped
Few stalks of fresh coriander’s root, bottom portion
Dried Herbs Ingredients:
2 star anise
1 cinnamon stick
1 bay leaf
Seasonings:
1 small bowl of Shao Hsing cooking wine
2-3 rounds of light soy sauce
Few drops of Ong Ky premium fish sauce
2-3 tablespoons of dark soy sauce
2 tablespoons of Gula Melaka (coconut palm sugar)
Pinch of salt
1 teaspoon of 13 spices powder
Few dashes of white pepper
Add pinch of salt and sugar to taste before serving
