So much time and effort to make the noodles and the process of cooking the noodles to the plate is not an easy task as well. This is why no one els can replicate or make a cusine like this in another country. Truly remarkable and a class on its on. I wish to try this food someday.

Really enjoying these videos appreacte the hard work you put into capturing their daily lives. You must be truly blessed with some good food while doing this! Makes me wish I had the ability to go to Japan and find these small places with so much heart and culture! Keep it up!

This is so impressive! Not only they are so organized and professional, but the machines are kept so clean! I have seen other factories where the place is covered in flour. Here, they use a vacuum and clean every machine between each use.

I agree. But I worried about all that water being dumped on the floor and machines with electricity in the middle of them. I assume they have the machines grounded.

What surprises me most, is the small amount of noodles that some of the restaurants appear to be buying. Two trays here, three bags there... that hardly seems enough to sell a day's worth of meals!

Absolutely fascinating and relaxing to watch the processes of this restaurant! It was also impressive that they were so stringent with their cleaning processes as to avoid cross contamination as much as possible. Great video and hopefully there’s a 5th generation owner in the future! 😁

Please kindly pass the message to the noodle making boss to kindly allowing the lady worker to sit down while folding the noodle into a bunch. I think that is going to help her spine and also make the process and your product better, because when she is more comfortable at her position for such a long stretch of time, the noodle is going to taste and look better. 蕎麦とうどんを同じ製麺機使う際はかなり気をつけないと、うどん食べた人が蕎麦アレルギー起こすリスクがあるので、大変ですね。
