I'm so glad I found this channel. I know you mainly made this aimed at people on keto diets but as a type 1 diabetic this is a lifesaving channel. So many (good) foods have carbs in them and ruin the control I have over my blood sugar. It's hard to find snacks that have little to no carbs while still tasting good. You make this easy with these wonderful recipes that are simple and tasty. Thank you so much!

I've been making almost the exact same recipe for a year. Though no husk. I hate that stuff. And I use 6 eggs instead of the water/oil and 2 eggs. I'll have to switch out. I'm sick of buying so many eggs. I also sometimes add in 1/2 pack of yeast and 2 packs stevia to give it a true bread flavor. I also take this recipe and make 8 hotdog rolls with it, but making aluminum foil molds.
@tiffanyhernandez33224 жыл бұрын
Hi. Can you just add the 1/2 pack to Joe's recipe above with the stevia? Do you think that would work? I miss the taste and smell (lol) of a good yeast roll/bread. Thank you so very much.
@lemmh24 жыл бұрын
@@tiffanyhernandez3322 haha! IKR! That smell! My mouth waters!! What I do is use like 1 tablespoon of water, and "bloom" the yeast in 2 packs. I assume you can use 1 pack, or maybe a pinch of monk fruit or anything else you want. The first few times I did it, I used like 1 teaspoon of honey to bloom the yeast. Yes, it's an extra 4 carbs or so, but spread out over 6 rolls, it doesn't affect the macros too much. Though I couldn't taste the honey, so I switched to those Splenda stevia packs in the green and grey box. I'd say use whatever you want! Let's bring the real bread smell and taste back! :D

Those do look great, however I think we suffer from making things look like the real thing and therefore they don't function like it due to being much more dense. I think I'd prefer something thinner but that is about equal in terms of weight to normal bread. Or even less so that the fillings can be the star of the show and the bun is just to protect your hands and to hold it all together.

@tamb75873 жыл бұрын
A suggestion that I did .. I dissolved a pkg of yeast in 3 tablespoons of lukewarm water , added that to my mixture let rest for at least 30 min ..Why? To make it rise like real bread.. Also the yeast metabolizes the little bit of sugar in the almond flour so 2 good things happen . You have slightly risen bread that has the flavor of yeast which is what we are used to and because the yeast metabolizes the sugar that is in the almond flour your net carbs are even less than what they were to begin with. Baking powder alone will not make things rise because the action of sugar metabolization creates the gas that causes foods to rise .. When we bake with real flour it is usually self rising flour so it Has yeast already added to the mixture. Without yeast your baking powder is going to do very little. Keto bakers constantly say that Nut flour will not rise. That is partially correct nut flour will not rise unless you add yeast to the recipe.

Finally! Thanks Joe. Just to be clear, the xantham gum should be added to the dry ingredients or after adding the water?
@lemmh24 жыл бұрын
I'd say yeah, from personal experience. It's much harder to blend it in without things getting gummy if you don't do it with the dry. I make two batches usually, one for hamburger buns, for which I have molds, and one for hotdogs, which I make homemade foil molds for. I only put xantham in the hotdogs so they hold up when you half-slice them. I've had serious issues in doing the hotdog ones second, when leaving the leftover goo from the first batch. It doesn't want to mix well throughout the entire batch if it's already moist. But maybe Joe has a different experience. He's better at this stuff than I am lol
