Thanks Cleo. Well- spoken lady, recipe perfectly explained. Like the addition of paprika to meat mixture (I see most pastelles looking so colorless). I like the addition of tumeric to dough for a brighter color.

Corneal and cornflour are sometimes used interchangeably by manufacturers, what they do is sometimes specify the grain. Promasa cornmeal which is what we use in Trinidad is a very fine cornmeal, yes a bit like corn flour but still not that fine. You can use what you want but we use fine cornmeal.
