This is my first visit to your channel, and I love it! The algorithm brought you to me because I have been reading several videos of pickled ginger. I appreciate all the steps you take, how well you explain each step, and your excellent suggestion to use a few slices of fresh raw beet to give that pretty pink color to the ginger without resorting to an artificial addition. There is an Asian market a couple of hours' drive from here, which I assume will have some new ginger with its pink growing tips whenever it comes in season. I am sure it will be expensive if I timed it right! I am hoping to find more of your programs. I love Hungarian food. You have a very relaxing, pleasant way of teaching!

Beautiful, I would water bath it for ten minutes to seal it then it lasts a year or more.

Do you use pickled ginger in recipes or just eat it as a snack? Also I thought refrigeration slows down the fermentation process?

Terri Storms : with this ginger you just have to wait for 3-4 days until the ginger soaks up the flavors.
