TAMARIND CHUTNEY 🇹🇹 / SAUCE- a perfect recipe everytime to have with doubles or pholourie! (#7)

Tamarind chutney is well known as the perfect accompaniment to our famous DOUBLES & PHOLOURIE (my 2 favourite dishes to have with this chutney). This dish is so easy to prepare and uses only few simple ingredients!
INGREDIENTS
Tamarind - 5 pods (shelled)
Shadow Beni / Cilantro / Bandhanya- 5 leaves- chopped fine
Garlic- 2 cloves (GRATED (better) or finely chopped)
Brown sugar- 1 cup
Salt- 1/2 tsp
Water - 4 cups
Hot pepper (optional)- scotch bonnet
METHOD
1) In saucepan, add water.
2) Add ALL ingredients.
Break apart pods by mashing them with a spoon
3) Stir everything together.
4) Let it come to a boil. Then lower heat to medium-high and let simmer/ cook for 20-30 minutes ( for liquid to dry down and for chutney to thicken)
5) Keep mashing pulp throughout cooking process.
6) Once finished, transfer to a bowl / container. Can be refridgerated for a 1 -2 months.
