I put wasabi on Swiss Emmentaler cheese instead of mustard - I tried the toast with mayonnaise and with wasabi. It was a new experience - I liked it. Thank you, Satoshi, for sharing your great wasabi video with us.

I LOVE wasabi, especially when I have a cold or cold coming :). the first time I ever tried wasabi was as a teenager, and I had a flu. I ate it without knowing what it was; despite my older brother's warning. I woke up and the flu went away cause I ate the entire glob of wasabi hehe. Was hooked ever since. Anyway, great job as usual, Satoshi-san! Agreed, Satoshi-san, the REAL wasabi is not as spicy.

I could listen to you all day and night everyday.. we have here in Wisconsin up the street a full-on Japanese restaurant run by people from Japan... they make all Sushi right in front of you.. but still I mix my Wasabi in my soy sauce really good dip my sushi rolls in it... so so good.. Matsu ya is the place.. you Google it :-)

Interesting recipes..... that wasabi cocktail inspired me to try it with Gin & Tonic...Shoyu & Wasabi is my favourite condiment to eat with almost all types of meats.

I am really excited to try the liquor and wasabi in hot water. I'm also thinking it could be made with honey or sugar; more like a French version. Thanks for the suggestion. The realization I get from this video is that you can use wasabi anywhere western cuisine uses chilis or sriracha but in smaller amounts. I'm really disappointed in myself for not realizing this before. I guess I needed you to show me. Again, Thank you.

I'm not a fan of hot spicy stuff myself, but wasabi is different - it doesn't burn long, it kinda stings and gooes right away. At least in little doses I use...

The soup is a great idea! Never heard of using wasabi in soup. I wonder if it will work with yuzu kosho as well. In summer I often make a salad with cauliflower and edamame with a simple mayo, soy sauce and wasabi dressing. Also try wasabi on a sandwich: I use the sweet kanto style tamago yaki and spread some mayo and wasabi on the bread and use tamago yaki as filling. It's fun to think about new wasabi recipes. I saw a recipe for mayo kara age. I wonder if it works if you add wasabi to that marinade. Or in the regular kara age marinade substitute the garlic for wasabi. What do you think?

After watching the vid, I decided to build on the Wasabi /w cream cheese on toast recipe by topping it with a few slices of smoked salmon I found in the fridge. It makes for a really tasty breakfast/lunch meal and I highly recommend it.

Yes, please do one about shio koji as I'm unfamiliar with it. Yuzu kosho, too as well as maybe just something simple like wakame or even kombu - for us non-Japanese, we have a lot to learn so that we can use up these ingredients other than in basic soup :) I really love this "10 ways' series that you do, Satoshi - you put so much effort & creativity, it really inspires me to try some of this in my kitchen.

What is "shio koji"? I looked it up and still a little confused... I enjoyed this video!! I had no idea there were so many ways to use wasabi!!

Shio koji is made using rice koji, salt and water. In Japan it is much easier to find already prepared, but I haven't been able to find it where I live. There is a company in Oregon that sells rice koji, and I usually pick up a container when I go to visit my family, but it is also available online. There are videos here on KZbin that provide instructions on how to make shio koji. I follow the one from sazantv.

Satoshi you are doing real good. We can get real wasabi too here in California. The fresh wasabi is coming from Oregon and to me it is totally comparable to ones grown in Shizuoka. The cost is about $12-$15 for small root.

Hello, I'm kind of late but, how do you make the weird taste and smell of wasabi(the prepared one, like the one you see in supermarkets) gone? Any tips? I'm dont really like the taste but I do like the spiciness of a wasabi. Sorry for my bad english btw.

I can only put the freshly grated wasabi on top of sashimi. Eating sashimi with tube wasabi on top would ruin my makeup! Tears would be running down my face and my nose would be dripping; gotta mix it into the shoyu. Fresh wasabi here is so expensive at about $70 a pound!

the wasabi i bought tasted different. It much more concentrated. I tried it with Filipino "kinilaw". and my brain freezed. Much more different than the wasabi i bought with sushi in the mall.
