How long does your dynamic warm up takes? I do also like to get pretty warm before doing my workout but I usually have only like an hour with my athletes where I need to cover speed and power and also some strenght and conditioning maintance. I just feel like spending 15 minutes on a warm up is too much. Any suggestions?

You mention at 7:05 you shift your hips back to hit more glutes in the split squat. Every other video I've seen says to learn forward to hit the glutes. Does this have something to do with the foot to knee or dumbbell position?

Yes you want lean the torso to hit glute max you also want to make sure to shift back and get a more vertical shin to hit hamstring and glute max

This would be more of a nutrition recommendation and calorie expenditure. You can use full body splits to help with calorific deficit but you must take into account several factors including total daily caloric intake, BMR, hormones, and macro timing.
