Low Carb Keto Recipe: Pound Cake (Strawberry Shortcake)

In the south, February and March are the beginning of the festival/fair season. Where I live it's Strawberry season also. This Low Carb Keto Pound Cake is perfect for Strawberry Shortcake.
Low Carb Keto Pound Cake
1 Stick (113g/1/2 cup) melted Butter
2 oz(56g) soft, Cream Cheese
1/4 cup (41g) Allulose ( you can use Xylitol, Monk Fruit, Erythritol)
1/4 cup (28g) Confectioners Swerve
4 Eggs
2 tsp Vanilla Extract
1/2 cup Heavy Cream
1 cup (105g) Almond Flour
2 Tbsp (17g) Coconut Flour
2 Tbsp (15g) unflavored Protein Powder
1 1/2 tsp Baking Powder
1/4 tsp Salt
Preheat oven 350 F/ 177 C
Lightly spray a loaf pan with cooking spray. Line the loaf pan with parchment paper then lightly spray parchment paper with more cooking spray. Set a side.
In a mixing bowl, cream together melted butter, cream cheese, allulose, and confectioners swerve. Add eggs, vanilla extract and heavy cream then set a side.
In a separate mixing bowl, add almond flour, coconut flour, protein powder, baking powder, and salt.
Add dry mixture a small amount at a time until completely combined. Once combined, pour batter into the prepared loaf pan.
Bake in a preheated oven for 20 to 25 minutes until a toothpick or knife inserted into the cake comes out clean.
Once the cake is done, allow to cool then serve.
Low Carb Keto Whipped Topping
8 oz soft, Cream Cheese
2 cup Heavy Cream
1/2 cup (75g) Allulose
1/2 cup (58g) Confectioners Swerve
1 Tbsp Vanilla Extract
With an electric mixer in a mixing bowl, whip cream cheese. Add heavy cream, a small amount at a time to avoid making a mess, allulose, confectioners swerve, vanilla, and salt. Whip to a stiff peak. Set in the fridge to chill until ready to serve.
For Strawberry Shortcake add topping to a slice of Low Carb Keto Pound Cake and top with fresh strawberries.
