Hot tip: blend those onions and juices up in a blender, add some salt and any herbs and spices you like to make an incredible gravy! This is what I do when I make a roast chicken. I roast them on onions as well and make a caramelised onion gravy with a dash of white wine, tarragon and sage.

This is a great alternative turkey recipe for Thanksgiving, especially for those hosting people going to multiple dinners, or those who’ll end up going to other dinners in addition to the one they are hosting. I remember organizing an office Thanksgiving lunch (the day before Thanksgiving) and going with a catered spread from a fancy Chinese restaurants-it was a big hit and saved everyone from having to eat turkey two days in a row.

I'm just like you I do not care for turkey but through the holidays everybody wants one. I actually have a Butterball turkey breast that was given to me so this is exactly what I'm going to do with it for the holidays Thanksgiving is over but I still have a Christmas meal to prepare. I'm not going to tell anybody I'm making this version & see how it goes over at our family get together on Christmas Eve. I took your recipe and made it more to my families taste. I used onion, celery, sage, thyme, and rosemary as the filling and made a traditional gravy with its drippings. SO GOOD. I'm not sure I will go back to a whole turkey again. It was fun and took significantly LESS time in the oven.

I've tried making whole & breast turkey multiple times & wound up throwing it out... it tasted gross. I saw a recipe using wet brine but that looked like way too much work. I'm definitely trying this recipe. I don't like star anise so I'm going to substitute 3/4 tsp fennel. I'll let you know how it turns out, thanks. BTW- My alternative Thanksgiving tradition became Raspberry Duck Breast. It will be nice to have turkey again- LOL. UPDATE- I finally made this today. Yowser, the best turkey I have ever eaten!

I wish the butchers around here around de-bone a turkey! Its been a pain in the butt enough trying to get them to cut meat to order sometimes! I would do it myself, but I would end up hacking it to bits! Plus... my roommate is allergic to citrus, so it would be just me eating it :(

STOP with all that sodium and salt. Turkeys need flavor, add spices, Humans need long life Remove as much salt as possible and the other sources of sodium. We have refrigeration now we do not need to super sapt foods to keep them safe to eat.
