Wow! I can not wait to impress my food-nerdy friends with this!!! They are already so impressed that I’ve gone from a zero to a hero in the kitchen in 2 years and it’s almost only because of you, Marion! You have changed my life! Really! Before my friends and family came for beer and karaoke when I invited them. Now they ask if they can come over for food. And they keep bringing me gift cards for grocery stores!!! The biggest favourite is your Southern Thai Tamarind Prawns!!! I’ve even gotten tired of making it, and saying “We can’t have it every time!” I love what you have done for me, Marion! My all-life-long Christmas feast is juicy&crispy roasted duck, stuffed with apples and dried fruits (plumbs, apricots, figues, raisins...), served with potatoe dumplings and cooked red cabbage spiced with cloves, junipers, apples. This is archetypical for Northern Germany Christmas. I just did it last Sunday for 4 persons (a 2,5 kg bird). On 25th i will cook it again, for my partner's family, 8 people. When I cook this menu, the entire home smells incredibly awesome, the cloves and juniper, the red cabbage, the stuffing and the golden brown skin of the duck, the sauce... it is Christmas. My German grandma is then smiling at me from heaven. I always think of her when I cook her traditional dishes. Am a big fan of yours, half Cuban, half German, living in Brussels, cooking is my passion.

I think my mate will be in charge of Christmas dinner this time. I did everything for Thanksgiving -- planning, shopping, cooking, cleanup. My guy barely lifted a finger... But he was ill for a couple days over that weekend...so can't be too resentful! 💞

I am on my own with a very old dog. My Christmas tradition is to always cook something special that I've never attempted. I've always wanted to try a goose so I gave it a go. Super expensive versus the actual haul of meat, but my goodness did I savour the goose fat for weeks after that I captured from the roast. Another thing I thought of was to try a Peking rabbit version. Was amazing, though I wanted more than it gave. :)

Since my daughter moved away from home, I no longer celebrate Christmas. But when I did, Finnish boxes were always a must. Carrot box, cabbage box. They are so good. A-M

We make a danish christmas: roast port, caramelised potatoes, peas and carrots, gravy and apple sauce and like a danish rice custard that has almonds in it with a warm cherry sauce

I made the pork and the stuffing last Sunday for a group of friends and oh my goodness it was so delicious! And the best part is, if there’s any pork left over, it’s delicious to eat cold!

My mom usually made a beef tenderloin roast, her famous mashed potatoes, and Grandma’s spinach salad for Christmas. Sometimes she will mix it up with fish or filet mignon - depending on the head count. We only have stuffing on Thanksgiving since we cook it in the bird’s butt. 🙃 This year, my husband, son, and I are staying home for Christmas Day. My in laws gifted us prime rib, so we will most likely make that this year. New Years Eve is the big cooking day for us as I always try something new. Maybe this pork recipe will be it. ☺️

I will never tire of your pork belly recipes: they all look so good, and you seemingly outdo yourself with each variant! I want to make them all, including this one! Thank you! [Edit: This year, I'm making either Cornish hens (if I can find them) or a roast chicken. Not exactly traditional, but my mother wants it this year. Watching from the US.]

Both these dishes look great! I have cooked pork belly a couple of times-- once as a roast, once cured as bacon. Delicious. Watching you cook the pork belly here makes me want to cook another one myself. I will need a different paste, as my wife does not like heat of any kind.

Hi Marion, greetings from Malaysia. Yet to decide on my roast for this year, might be pork or lamb, but this has given me some ideas. Using chilli paste as the seasoning for the pork is a stroke of genius, might use that but with tom yum paste from a jar perhaps... still mulling it over. Stuffing wise, I'm pretty set on doing smoked duck, mushroom, chestnut and cranberry. Yours looks d'lish! Merry Christmas 🌲 to you and your lovely family.

Commenting from Colorado, here. My aunt will have made her annual pilgrimage down to New Mexico to make tamales by now, so those will be available, and I'm sure there'll be a big pot of posole as well, along with the fan favorites of turkey and ham and a bajillion side dishes. It's a wonder I don't rupture some years. XD My favorite stuffing has a cornbread base, with breakfast sausage, the usual suspects for aromatics (onion and celery) and Craisins (sweetened dried cranberries that get all plump from the stock and drippings). I could (and have!) eat that just by itself for a meal. 🤤

I made your rolled pork belly with the rice filling and 5 spice sauce last new years eve, it was like the most showstopping, perfect thing I've ever cooked and it was in 2020 and I couldn't invite anyone for dinner except my parents D,: but this one looks interesting too, I have some doubts about all that chili though, your definition of not spicy is not the same as mine....

Imo the keys to a good stuffing are a good combo of veggies, especially leek or shallots, and don't skimp on butter or white wine (cooking wine if you dont like alcohol). And cooking it in the oven until it gets a CRUST. Anything less to me is just soggy bread lol. love your videos! From MN, USA

This year we will be having your roast leg of lamb with the tomato miso sauce. Our family usually has lamb on Xmas eve here in NewZealand with lots of cold leftovers for Xmas Day at the beach

From the UK here where turkey or sometimes goose is the go to Christmas dinner, but we prefer a beef rib roast, medium rare with all the traditional trimmings, but especially roast potatoes and Yorkshire pudding. I hate Brussel sprouts but have to cook them for someone else and I’m not allowed to doctor them (stir fried with bacon). Dax should definitely eat the shrimp paste, on camera. But for the $1000 he has to eat that whole pot you showed. It would make a great video 😎

But did not like Turkey preferred chicken or pork. My homemade stuffing is similar to yours. In place of the chicken bits, I use hamburger. So simple..

You are just amazing mam. I first watched your video on how to make malaysian sambal but funny scene was I couldn't found the incredienta because I am in Pakistan. I tried cooking nasi lemak but failed badly not because the recipe was bad but you are just extraordinarily perfect.

Oh my gosh I need this, you're going to send me some right!? Maybe with some sauteed bok choy with garlic. I don't know what we're going to have yet, I gave my daughter some options and so waiting for her answer. I think I heard that crunch from here. Stuffing depends on what it's with and who I'm with, I like doing cornbread stuffing with sausage sauteed apples and you could add cranberries raisins even cherries. I will even cut some really thick pork chops and cut a pocket and put some of the stuffing in, works with chicken too.

Adam's stuffing: Sweet italian sausage removed from the casing 4 sausages brown in a frying pan and add the saute veggies., 1 vidalia onion or wallawalla, 1 shallot,6 cloves garlic peeled and chopped, chop the onion and shallot, 1 baking apple p, cored, peeled and chopped, 2 sticks celery chopped, 1/2 cup cooked wild rice, , 1 diced carrot, red bell pepper chopped, 4 black and white pepper corns(each), whatever mushrooms you like of any mix. Saute sausage meat first and when cooked through add onions and celery and the rest of the veggies and cook until the onions are translucent. Saute in 1 srick sweet (unsalted) butter add 1/4 tsp salr 3-4 cups stock infused with 4-5 slices ginger, 2 springs each of parsley, rosemary, thyme, sage, savory, 1/5 tsp of cumin seed, fennel seed, 1 star anise, Bring to a boil and simmer 30 minutes after it comes to a boil add 1/2 cup each of rains, dried cranberries crystalized ginger, chopped pitted dates, chopped walnuts and chopped pecans. Use a salt free stock of either chicken or turkey. Use any remaining srock to make the gravy Two bags of peperidge farms stuffing bread pieces or you cna use 6 slices of pumpernickel and white rye bread dried in a low heat over 200F then cube or tear up. in a very large mixing bowl add the bread then cover and mix together the sauteed vegetables. remove the herbs from the broth and chop them up and add to the bowl. Grate in the zest of one orange and one lime. Add the precooked wild rice when you put the bread into the mixing bowl. Stir until well blended then add the broth until the mixture is moist but not super soggy. Keep mixing until the broth is absorbed.Y you might have some left over use that to make the gravy. Cover the bowl with foil and set aside in a warm oven until ready to serve. Preheat serving dishes with water just off the boil for 15 minutes. You can also substitute some cornbread muffins (1 muffin for 2 slices of bread or half the bread crumb package). Enjoy!

Nothing beats the original Pinoy Lechon de Leche. I hope she gives credit to Pinoy because it’s particularly an original Pinoy recipe. She should not generalize it as Asian.
