I loooove papaitan! Definitely an acquired taste. Even some Filipinos won’t eat it. For newbies, u gotta get past the bitter, sour flavor. And no, there’s no actual poop in there. It’s “pre-poop”. Here in the southeast USA, theres a fish called shad that comes up into the rivers from the ocean to spawn. We do something similar to the tuna roe with the roe sacks from shad, as well as with mullet. Stick it on a skewer, wrap it in a bit of bacon to keep it from drying out and a bit of soy sauce with ginger and garlic, and toss it on the grill.
