WOW! The taste of this tart is beyond amazing! French Tarte Tatin, make it today, please!

French Tarte Tatin is possibly the finest apple dessert you will ever taste!
Simplicity at its best, the French Tarte Tatin is basically sugar apples and pastry, yet it tastes out of this world! This French Tarte Tartin recipe is the thicker one, placing the apple pieces vertically for a higher impressive looking apple tart.

Originally it was cooked in a copper pan with coals placed on top, today any oven proof pan or dish will do the job. No one knows for sure the exact history of the Tarte Tatin but there’s reason to believe that it was created by accident at the Hotel Tatin in France by overcooking (caramelising) what was suppose to be the apples for an apple pie. One of the Tartin sisters tried rescuing the overcooking apples by placing pastry on the top and turning it upside down. It was still served and the hotel guests loved it, a new dessert was born.
That’s why, never be worried about making mistakes, that’s how some of the best creations came about.
French Tarte Tatin is usually served warm, the traditional Tarte Tatin is not made of puff pastry, has no cinnamon, raisins or any other added ingredients. It works perfectly as it is. Although I did add some cheeky star anises in the caramel, as it does give it an extra something.
I like to add the serving of a quenelle of vanilla ice-cream on the side I feel completes it, but that’s just me and I’m sure traditionalists will disagree.

I made the recipe today without the star anise and it worked out very nicely. The presentation was nice, the crust was almost like a shortbread, good crumb and firm next to the caramel. My first attempt at the caramel went south, but it was because I did not have enough heat under the pan. Second attempt was much better, but I needed another minute or so to darken it a bit. A success all around.

Oh my goodness that looks absolutely scrumptious! A well made Apple Tarte Tatin beats a traditional Apple Pie hands down! I also use Star Anise in my Carmel Sauce but, I make the “Dry” version. (No water) You just add the Star Anise as soon as your sugar melts. I love the fact that you used larger cuts of apples. So many people slice them too thin (Yes, it is more aesthetically pleasing.) unfortunately you windup with a squashy/mushy texture. I like to freshen up my apples with the juice and the zest (finely chopped) of one lemon, while I’m cooking them partially the pan. Also, thank you for not using store bought Puff Pastry or using Brown Sugar in your Carmel Sauce. Once again you’ve outdone yourself Chef Joel! 👍🏼👏🏼👏🏼👏🏼 P.S. I have to drink a lot of water for medical reasons and it’s really difficult for me. I am so tired of adding lemons and cucumbers... So, l started adding 4 to 6 drops of Anise Extract to 30 ounces of water. There’s no nutritional value whatsoever but, it makes the water so darn tasty! But, when brewed into a Tea, it alleviates cramps and drastically reduces nausea it also helps improve digestion. I’ve been doing this for years, Oncology Nurse at NYPH told me about it.
